It sounds as though you need a new thermostat to sort the running cool issue :) that's what i was thinking! maybe it's opening too soon? doesn't seem to be too big of a deal, i'll replace it but i don't think i'll have damaged anything in the past few days as i've let it warm up a bit before driving.
