Think long and hard about whether or not you want to do this Mick...
1) You need the kit from a saloon, as you need the mounting brackets. The rear ones pull straight out...I don't know about fronts. Does a 360 GLT have the same pattern headrests as the redline?
2) You need to cut through the supporting bar in the seat backrest to mount the brackets, then get it all welded back up again to maintain the strength of the backrest.
It's not *that* much work, but it's more than you'd think. If I were starting again, I'm not sure that I'd bother.

How common were rear headrests in the hatchbacks?
Can a back seat with headrest be put straight into the place of a non-headrest back seat?
That conversion sounds a bit too much trouble for me.

No, headrests were never fitted as standard as far as I'm aware (and I don't believe Jereon on this one!). Having been inside a backrest, I don't see how Volvo would have done it. I've done it, but it's not a particularly neat arrangement inside the backrest - it's perfectly smart, but not the sort of thing you'd accept from a manufacturer!
You can't swap them directly - the hatch has a reinforcement bar in the way of the headrest mounting brackets, whereas the saloon's un-reinforced backrest is bolted to a metal skin below the parcel shelf. I took the brackets from a saloon (they unbolt), then cut through the reinforcement bar, then had it all welded up again. Not sure if I'd do it again...bit of a PITA...plus you have to remove them to fold the seats down, and they a bit stiff!

Mine is the same...and it's a bit of a PITA! I could knock up a guide, but I feel a bit dubious about advising people to chop through a safety feature on their car!

This is the guide someone made in NL. I used an online translator so the grammar wil suck big time. The dutch text was did not have the best grammar to start with, but I think the idea is clear.
Converting the back seat from sedan to hatchback goes with more difficulty but is well: Remove the large protection cloth by un screwing metal the strip. You remove the backrest by twisting a screw separately which is on the the side below, this is the turn point. To the bank a tenon sits which twists in a breach of coachwork. In the breach sits a plastic slide which is stuck with the screw which must be unscrewed. One loosens and backrest eruithalen.... The back seat has been in fact built from three parts: The lining (including foam rubber), metal backplate and armrest/ski shutter.
The middle armrest sits with rivets nails/blind rivets. these permanently sounded must be drilled out. The head support slides sits screwed down to the metal achterplaat. Two propellers with slide therefore 8 in sum. These unbolt. Support remain neat at their place in the lining. The lining sits folded for metal the plate and is permanently clasped with metal ` clamps. These are simple to bend. The whole lining leaves now separately.
Metal exchange plate and the head support screws down slides. Now a problem comes where I have not brought, as yet a solution in practice. The bottom two screws can put you go in to the existing holes in the backrest backplate, but upper however go now hid to u-bar that is on the hatchback plate and do not sit on the sedan.... I have not screwed down these thus and at fixing the lining they come good sit and don't rattle. Solution can be to drill holes and with a pump grip to rivet.
Now rivet the armrest back. Guard and sounds or screws. Bend the clamps back and put backpart on. Do not forget the rubbers for the pivots! Plastic slider screws down, headrestsn, replace protection cloth.
DONE!
