Yup, means the clutch is dragging, see if you can adjust the pedal height up a bit to give a bit more clutch plate clearance. Factory spec is 150mm from the carpet to the top of the clutch pedal rubber, but if you're getting dragging, then set it to 170mm and see if that helps.
If that still doesn't help, then possibly the clutch plate is seizing slightly on the clutch shaft, or possibly there's a fault with either the release bearing/clutch fork/pressure plate. All these need the clutch dismantling to check.

Ill get underneath it tomo then and adjust the clutch, fingers crossed that will help as i don't really fancy taking it all apart.
All the clutch parts, are less than a month or so old as they all got replaced when the engine conversion was done.

Ahh OK, hopefully just adjustment, well, you said unless you take your time. If you depress the clutch does the prop stop rotating after about one second, or does it keep rotating a bit?

Reverse crunch is just a result of the neutral spinning drive shaft, you have to wait a second or 2 after disengaging the clutch for it to stop, otherwise selecting 1st then reverse (with the clutch in) is another solution as it forces the drive shaft to stop. Anything other than this is clutch drag, and your clutch is not disengaging properly.
You should be able to hear the drive shaft turning and then stop when the clutch goes in, just leave the driver door open. Much easier than looking under the car, and works for 340s and 360s.
1st / 2nd is also quite notchy on my car, but if its happened recently could be something worn, I must look at some of the suggestions here too, I'm sure it improveable.

I would check the reverse gate adjustment first. Under the gaitor inside the car.
