tuning stock carb = higly problematic.
Only if done wrong which I will admit did and still does happen allot, the 5 boys used to always get the carb done to a spec not set up on the actual car, this caused allot of problems as they were very rarely right. Over the last 2 years though there have been big improvements in the way the cars are being setup, one of the main things that is happening at the moment is keeping the stock size venturi as they are able to keep more control of the fuelling, in an ideal world I would go for injection but as far as I am aware there is no cost effective way to do it. My brother is currently working on an efi conversion for one of my friends with a gt turbo and there is allot of work and little bits of fabrication needed to do this.
don't know exactly how much power can be expected from a modified stock carb
I would say you can get 220-240 reliably but the carb can be made fuel perfectly well for far more its just you would be running so much boost that you would be pushing you luck with other parts, there are a few UK one claiming 300Bhp and although I have not seen any proof by way of dyno printouts I have seen 2 of the cars in action at the pod, one ran 11.4 and if I remember correctly the other ran 11.6.
