Can anyone give me some measurements of the engine height? Just above the steering rack bracket (left hand side away from the pinion).

I've had problems with the manual and PS rack getting hit by the sump when the front drops into a hole in the road. I've only a few mm clearance to the sump, and adjusted my custom engine mounts a few times. Shortening them and then adding washers.

Is centering the fan in the cowling the best way?

I'm using the 940 mounts, so maybe these are more squashy than the 360 ones, but my 360 ones just dropped after a bit of turbo action (left hand one). I think the 940 ones have settled a bit too.

The 940 mounts flex a lot. if you want rubber 240 M46 mounts are a good bet but a lot thinner than 940 mounts
