That's interesting! I wonder if you have any ideas about which other type of evaporator might fit a Volvo 300 heater box?

Ummm....the original one? There is plenty of room to fit anything similar to original.
Just remove it, open it and measure what will fit. Fit it as close to the heater matrix as possible and block all air passages. The idea is that if any air is drawn through the heater matrix it also has to go through the evaporator. Then fit universal "ice-senser" to the upper quarter of the evaporator fins and make holes for evaporator connections and electric wiring for the senser.
Then just wire 12v as follows. AC switch -> ice-senser -> pressure switch -> compressor relay.
There in fact is the leccy part of the job.
Other stuff is just pipes and work.
Everything but the AC switch can be made without even opening anything else than the bonnet. Everything else is located at the engine bay.
Evaporator/condenser ratio is critical. They will have to have the right volume ratio. Try to find them from the same car if possible.
Heater hoses will have to route differently and the heater adjustment valve should be located elsewhere to gain room for evaporator piping.
No idle compensation is needed. Just raise idle to 900rpm and drive.
I also speak and write bad german if you need help
