Headrests...can be done. Do you know how to remove them easily? I have a feeling (unlike the rears) they don't just pull out.
I know the front insert was trashed, but I'll check the rear.

That is right, you can not pull the headrest just out. I know this because I changed the seat material from a front seat of a 5 doors car to a 3 doors car. The headrests are hold in place by two plastic clips. In the tubes of the methal legs of the head rests are two holes near the end of the tubrd. The two legs of the headrests slides into two white plastic tubes which clips, in the middel, into the two holes.
If you force them out you will brake the plastic. The only way to do it the right way is to remove the fabric of the chair. At the bottom of the seat parts the material is attached bij small metal rings. They are difiicult to remove. Just cut them with a tool and afterwarts use small tyrerips to attach the fabric. After you have removed the fabric you can see this plastic parts. And with a small screwdriver you can unclib the plastic so you can slide the headrest out. But be carefull the plastic is brittle.
Another tip: After you removed the fabric of the seats wash them in the washing machine at 30 degrees C (not warmer) and you will be surprised how the will look afterwarts, just as new. A salved front seats from a blue-line from a brackers yard. The material of the drivers seat was in a terrible state, green from algy, because it had been exposed to the elements for a long time. After a good wash it was surprisingly as good as new.

thanks for the photo shop pic Steve It dos look good with the black sills and wheel centres , good news about the redline for Adam as I used my spare front headrests for my rear conversion , If your careful you can remove the cover without removing the headrest there are some wire staples that hold the material just above the plastic trim thst hides the headrest frame from view

Hehe...good point 
Thanks for the removal guide. My car smells a bit dubious without an air freshener after 17 years of use, so I might wash all the fabrics (and the carpets).

No...no...I agreed to exchange a rusted solid wiper mech (which they charged me the earth for) for a set of 240 headlight wipers and a gauge, then asked one of the guys in the yard (where I come from, they set the prices) if I could have your stuff too. He said yeah, so I took it. Got back to the car, and the manager ran over, wanting more money, and so it went on...needless to say I didn't pay any more....tosser.
