Apart from the removal of the dash itself, why is it such a pain? I just have a simplistic vision in my head that you unbolt the whole thing and it'll come away.

It is pretty much that but personally I'd rather avoid taking a dash out on a daily driver as I reckon it'd take a good half day non stop. Atleast being built well everything should come undone/go back together ok. Tell tale signs are signs of coolant in the passenger footwell. Chesh wrote an article a few years back for VOC:

The only disadvantage with the 940 is the MPG, 2.3Turbo will only get 25mpg. 850s are a more modern engine and will probably do more, but how the T5R or Ts compare I don't know. They probaly also handle better, but I like the 940, its predicable and strong (stuff doesn't bend).

I will say 940 is a far longer lasting and reliable car than the 850, and the RWD gets the power down much more efficiently in the dry.

Very few common faults, leaky sunroof easily fixable.
Most of the best bits are post 94 (including the fix for the fuel relay which can break).

Would recommend a 940turbo to anyone looking for a big cheap motor. paid 750 for my '95 estate with 80k on the clock but that was a couple of years ago. Only thing to go wrong so far is the flywheelm but got a good one from a breaker for 50 quid. Think i should have shelled out for a new solid one from ttv racing.
