I think you need to shorten dampers if you cut two coils, otherwise spring is not compressed when suspension goes up and that is very bad thing.
From my experience on track suspension moves lot more than in any bumps on road, I have bottomed out front several times on track. Those bump stops ,that are these rubber things installed to shaft of shock, have actually quite important mission, I had one missing and then I decided to loose another too when I did change shocks, problem is that it allows now more roll and therefore lot less grip to inside rear.
Outer side is often bottomed when I corner on track and inside is very extended, near or same as when you lift car up.
Usually softer suspension gives you more grip and stiffer more control, it is always question of balancing these two. You could try to get mk2 escort springs to front, I have heard those are cheap and also that there is lot to choose from, but I have not tested if they fit, only some ppl say they are using them at front.
Anyway you should always have spring bit compressed, even when car is lifted, here car will fail mot if it is not and there I even agree.
I'm pretty sure if I would drive Ali's car on track here it would need some serious arch work afterwards
