They always look better with some wider tyres on the right wheels. Mud flaps can a pain, they often get pulled off when if you reverse against a kerb, they encourage rust where they fit on and they look a bit grandad
I'd leave them on with a very clean, unmodified original car, but whip them off if not. They tend to look scruffy if not kept clean. I've left them on the 360 but they are off on the 340 daily.
One advantage though is, as you'd expect, they keep the mud (and stone chips) off the rear lower wing and out of the bumper

Don't neglect cleaning the inner part of this wing/bumper. Mud easily builds up here, make sure you wash it out when you do the rest of the car, and around the rear spring hangers or you'll be asking for rot to set in!
The front mud flaps are even more important at stopping the millions of small stone chips and tar spots you get off the front wheels. These end up hitting the leading edge of the rear wheel arch.

Going to leave 205's on the back and put 195's on the front

I'd suggest that 205 is going to cause you some issues. I run 195's all round and my tyres just clear stock arches. Plus decent tyres are £27 each unlike in 205

So as i said on the first post about these wheels there my brothers, meaning i cant have them cause he needs them for his bm.
My dad was sure he had a few down at the other garage so we went down to have a look.
There was 3, 2 with brand new 205/55/15s on.
So when i got home i had a look through my tyre collection shed

and found a set of new avons 195/60/15's.
my plans is to run 205's on the back and 195's on the front.
if the 205's do rub on the back ill just wack on 195's.
Also gave the car a quick clean
Heres some pics:
205's
195's
More pics of the alloy later

I like the look of it on those wheels, just lower it and it'll look loads better, but you know that already
Oddly i quite fancy some mudflaps for mine so if you fancy parting with them give me a shout.
Oh and wheel collecting is very much FTW

Do you want just rears or front aswell?.
Also the mudflaps I had on mine the fronts were rears bodged to fit because the rears have Volvo wrote on them and I painted them

Hi Theo.
Your motor is looking well. I like the wheels.
205 size tyres might be a bit to big for it though.
Cheers Mark.

Slam that fool! I reckon -3" front would be a lil too much lowerage on 15s, without a little arch modifiaction. Rears are easy enough, fronts will however be a little more challenging.
