I've got some shocks off a GLT but I can't be certain if they are air or oil. Is there a drastic difference between the two?

no, there isn't.

if you compress gas shocks, they will fully expand as soon as you let them go.

oil shocks will do the same, as these are also a bit gassfilled, but won't expand all the way
