I've been offered a 340 steering rack for my 360 glt, will it bolt straight in or what!?!?

Bottom section of column is different lengths. So not a direct fit.!

Are there any combinations of the two that would work? like 360 collumn with a 340 rack!?

One of the seals has gone in my power system, so i dunno what to do!

Is that the case for both PAS and non PAS though? Surely non PAS 360's have the same racks as 340's

No, the shaft coming out of the rack is longer on a 360, Steve...but can be un-bolted and swapped.

You can fit any rack to any model (in theory...clearances are a different matter) with the right combination of bits - Rack, shaft attached to rack, lower section of steering column, and upper UJ (inside the car).
