In response to your post.
a) That image is copyright me.
b) There be no instrument panels round these parts especially not for Star Wars props construction.
May I suggest that you obtain resin replicas of the frame(s) you require.

They are also used in the cock pit of the Millenium falcon. As the first film was made in 1977, how could they be from a 79-81 car?

I heard about this for the first time the other day. Kinda cool, quirky detail. Kudos to someone for figuring it out!
If you're interested in supply of these, you're more likely to find someone willing to undercut the 230 Euro offer for 8 copies than you are give up a rare-as-hell cluster for non-car usage. Most of these early cars, and their parts, were binned years ago.
