I'm probably going to sound like an idiot, but what is the diffrence between the 340 and the 360?

Mainly:
340 - Renault engine
360 - Volvo engine.

Don't blame you for being confused:

440 - Hatchback
460 - Saloon

240 - 4 cylinder
260 - 6 cylinder

340 is a 1.4 vario
or either a 1.4 or 1.7 manual
the 360 is either a 2 litre carb or 2 litre injection available as manual only

MK1 340s and MK2 343s and 345s were also available with Volvo B19 engine.

MK1 with 2 litre engine is easy to spot though. Renault engine ones have flat hood:
