any word on whether a carb change is allowed?
I considered doing this amongst other things but know that you'll never make a 340 competitively quick for enduro, the regulations are simply too restrictive and you'll be up against far faster things in your class.
It'll certainly be the most fun enduro ...

is the gearbox an M45 or M47? How could I find out? What's the difference?

assuming it is an M45, would it then be a straight swap with a 5 speed M47 with diff ...

go for drilled/grooved discs and some decent breathing alloys and you'll be fine.

The wires that you cut would be a green live, two brown grounds and the red and black are speaker wires. I think they're on the same fuse as the heater blower system and I very much doubt they're the source of your problem. Unless at one point the wires accidentally shorted and melted something ...

have fixed the earthing fault on my rear brake light, it worked for a while and has now broken and left me stumped.

There are 12V across the bulb, continuity from bulb negative to ground and the bulb doesn't look broken and has a reasonable resistance across it ...

How long is the MOT and is it a 5 speed?
