Yep that round grey 2 pin plug is the water temp sender for the dash, the black connector you are correct is the water temp for the ecu and there should also be a single white pin connector for the water temp for the constant idle system (atleast that's what I was told).
I had to double check but I was right that is an LH2.4 ecu or EZK so nothing to do with motronic, you could probably sell that.
The thick red wire with the round lug on it is the 12V+ feed which goes on the back of your alternator and there should be a spade connector with a green and green/blue wire which also goes on to the back of the alternator and is the charge light for the dash.
The two big block connectors join the loom from behind the dash and drivers footwell to the engine bay loom, there will be corresponding plugs on your engine bay loom.
The constant idle box if you are missing it you can fit a manual constant idle system and wire in a relay but you would be best giving Matt (Dai's brother) a call on the number I sent you and see if he still has his breaking 740 B230ET and get all the bits that are missing.
That pic shows the plug for the two sensors on the back of the engine, one reads TDC and the other I believe reads the teeth on the flywheel?

Blue wire goes to the coil, and those two connectors join to the two connectors on the loom from inside the footwell/dashboard.
That's the best picture I could find, the small blue plug and the grey plug to the left of it with three holes and the grey plug just visible to the right of the blue plug are for wipers and lights so can be cut off.
In your picture with the blue wire and a black wire with a white round plug, I believe the plug is for the oil pressure light. I can't see what is fitted to the end of the blue wire but I don't remember seeing it so will have to look into that one.
I can't really see what is what in the last 3 pics so wouldn't like to comment incase I give you incorrect info.
