Clutch cable first, then pull all the shit out, just think it won't take that long to do as your not struggling with rusty bolts.
Compare old and new clutch cables side by side before installing.
The most common cause of a dragging clutch is too much clutch pedal free travel. With excessive free travel, the pressure plate will not fully release when the clutch pedal is pushed to the floor.
What adjustment have you got on 360 clutches???
Other than that, your looking at warped disc or pressure plate.

With the wheels off the ground, it was spinning them (turning the engine on the starter) in 1st but not in 5th. That suggests to me that whatever drag there is...there isn't much...but enough to make changing gear a PITA. I'll only really know how bad it is once the engine is running (later today?).
I'll try tightening the cable up a bit (Chesh: it's a nut-on-a-cable-type adjustment) and see what happens. Yanking the cable is relatively easy, so I'll probably do the A/B comparison, assuming that a simple adjustment doesn't cure it.
The car was perfectly driveable with the cable done right up when it was in the 360, but it slipped if you tried to beat on it....so disasters aside, I expect I'll be in it at the BKV.

It wouldn't even have to be bent, is it seated properly?
I'd be looking at clutch fork being seated or bent or clutch cable being stretched to start with. If the spigot bearing and thrust bearing are both new and have made no difference then it's reasonably safe to assume thye're ok, sop after that it's down to knackered disc or pressure plate, or even warped flywheel.

Ok....I *think* I have solved it. The clutch now appears to be operating correctly....although it seems too good to be true, so I'm hesitating to open my big gob and jinx it! 
I've used two different forks now, so hopefully they're not both bent. I pulled the cable, and it was exactly the same length as my brand new one.
However...I pulled the rubber bung out of the bottom of the bellhousing after the fork fell out of line during cable reinstallation, only to notice that when it 'felt' seated correctly, when you looked (which I didn't realise you could do so easily), it wasn't in quite the right place. I re-seated it correctly, and everything appeared to fall into place.
The retaining clip now appears to be useless (although the fork is under tension, so not going anywhere), but a quick conversation with Rupert earlier revealed that if you install the clip in the 'intuitive' position, that's probably wrong. It goes in the 'wrong' way round, as you look at it. I haven't checked this out in person yet, but I can well believe it - I remember thinking that the way the clip was sitting didn't seem right...even though it looked right at first glance.
Tomorrow: Exhaust, final cooling system plumbing & refill, final wiring details, heater box....er.....bonnet? Almost there.
